  • Analytical method for the determination of antioxidant activity expressed as percentage of inhibition, concentration of total phenolic and lycopene in tomatoes (Solanum lycopersicum L) by using spectrophotometry UV-Visible has been done. The examination of antioxidant activity was performed on tomato methanol extract with concentration of 10 ; 30 ; 50 ; 70 and 90 μg/ml respectively by using DPPH (2,2 – difenil – 1 – pikrilhidrazil) radical gave percentage of inhibition of : 18 ; 32,8 ; 60,8 ; 81,0 and 92,5 % respectively. Concentration of phenolic total in fresh tomato was 1859,2 mg/kg calculated as gallic acid equivalent while concentration of lycopene was 14,725 ± 0,0017 mg/kg.
