  • A qualitative analysis has been done for nitrite and nitrate preservative which were used on sausage founded in some markets in Padang. The preservative in samples were extracted by mixing with water. Then, the result of the extraction were identified with colour reaction. Analysis of preservative in samples were compared with standard preservative substance. As the conclusion, from three samples that had been analyzed on sausage fast food, the preservative agent were nitrite and nitrate. Analysis of protein with thin layer chromatography method, was found unpreservative meat protein contains more amino acids than preservative and prepared meat protein with other ways.
