- The effect of organic acids consentration on solubility, degree of deasetilazed, viscosity and moleculer weight of chitosan has been studied. In this research, chitosan was dissolved with three types of organic acid solvents ; acetat acid, formiat acid, and citrat acid in concentration of 1%. The degree of deasetilazed chitosan was determined by using FT-IR spectrum. Chitosan of various time and concentration was dissolved with asetat acid and formiat acid and it’s viscocity was measured by using Brook – Field Viscosimeter. The data gained from the result of flow time measurment was then processed to find the specific viscocity and relative viscocity values. And then trough specific viscocity and relative viscocity could be know. The value of intrinsic viscocity was inherent viscocity graph and reduced viscocity was extrapolated to concentration zero. The moleculer weight of used chitosan was determined by using Sakurada – Houwink equation. Chitosan was soluble in acetat acid and formiat formiat acid, while in citrat acid it was insoluble. The degree of deacetilazed chitosan in acetat acid solvent was 83.38% and chitosan in formiat acid solvent was 82.38%. The greater concentration of chtosan, the larger value of viscocity would be. The molecular weight of chitosan in acetat acid solvent 893,000 and in formiat acid solvent it was 810,000. So, based on the molecular weight it could be stated that the molecular weight of chitosan used was high according to Protan Statement.
