  • Sodium benzoate and potassium sorbate are preservatives, which is commonly used in foods and beverages. The adding purpose is to prevent the growth of bacteria, fungi, and molds so that the process of decaying and acidification due to the decomposition can be prevented. The purpose of this research is to obtain optimum analysis conditions in the determination of sodium benzoate and potassium sorbate in syrup by high performance liquid chromatography (HPLC) in reversed phase with shimpac VP-ODS column (4.6 mm x 250 mm). From the orientation, the optimal analysis condition with ratio of methanol-phosphate mobile phase (30: 70), flow rate 0.8 ml / min, UV detector at wavelength 230 nm and 1.000 AUFS sensitivity. In validation test of the SUN QUICK syrup, recovery test is respectively 101.89% and 101.31% for sodium benzoate and potassium sorbate, the relative standard deviation (RSD) is 0.7982% for sodium benzoate and 1.625% for potassium sorbate, limit of detection (LOD) is 8.34865 mcg / ml for sodium benzoate and 9.59296 mcg / ml for potassium sorbate, and limit of quantitation (LOQ) is 27.82883 mcg / ml for sodium benzoate and 31.97943 mcg / ml for potassium sorbate. From the calculations, the concentration of sodium benzoate and potassium sorbate from all four brands of syrup meet the requirements that is stated by PERMENKES RI 722/Menkes/Per/IX/No. 88 of food additives.
