- Lady fish (Elops hawaiensis) is a pest for milkfish in traditional fishponds. Lady fish meat contains a high protein needed for body to support the process of metabolism. Another nutrients required by the body are amino acids and minerals. The aim of this study was to determine the content of amino acids and minerals from the fish meat of lady fish. This research was conducted in February - March 2017. The activity of sample preparation were conducted in Fishery Products Processing Technology Laboratory, Department of Fisheries, Faculty of Agriculture, University of Sultan Ageng Tirtayasa. This research includes several stages consists of sampling, weeding, processing and chemical analysis. The three treatments were freshed, steamed and boiled. The result showed that the lady fish meat contains 15 kinds of amino acids, 9 essential of amino acids and 6 non essential of amino acids. The highest essential of amino acids are leucine and lysine. The highest non-essential of amino acids are aspartic acid and glutamic acid. Potassium macro minerals have the highest content of 10692.69 mg / kg (freshed), 9284.27 mg / kg (boiled) and 8408.24 mg / kg (steamed) fish. The highest content of micro mineral in lady fish meat is iron mineral of 23.01 mg / kg (freshed), 20.49 mg / kg (boiled) and 26.80 mg / kg (steamed).
