- Surimi has some important functional characteristic such as gel formation properties and high water holding capacity. However surimi might also loss its functional characteristic of protein denaturation during storage due to freezing temperatures. The present study of the functional properties of various types of demersal marine and freshwater fish has not been done yet. Therefore, this research aims to determine the best types of fish of demersal fish group of marine and freshwater equivalent surimi to be economically advantageous in terms of the functional properties of surimi produced. This research used laboratory experiments. This study was conducted in February-May 2015. Results of the research of the best fish species of demersal fish group of marine and freshwater carried by the 3rd highest sequence of each species of fish. Surimi functional characteristic can be viewed based on the yield, WHC (water holding capacity), whiteness, and gel strength. The best surimi of the various types of marine demersal fish based on the functional properties of fish surimi were surimi of tiga waja fish (Sciaenidae sp.), kurisi fish (Nemipterus sp.), and kuniran fish (Upeneus sp.). Surimi the best of the various types of freshwater fish based on the functional properties include mujair fish (Oreochromis mossambicus), tawes fish (Puntius sp.), and tilapia fish (Oreochromis niloticus).
