  • The aim of this research was to determine physical characteristics of nisin microspheres with alginate-gelatin matrix (2 : 0.5)%. Nisin microsphere were prepared by ionotropic gelation method using aerosolization technique. Alginate-gelatin matrix (2 : 0.5)% and (2.5 : 0)% were used in this study. Resulting microspheres were characterised in terms of physical characteristics (morphology, particle size and swelling index). FTIR and X-ray diffraction studies were performed to investigate polymerpolymer or polymer-nisin interaction. Result showed that microspheres have spherical shape. Particle size of all formula were varied in the range 3.75-5.01 μm. In the presence of gelatin, maximum swelling index increased from 382.33% to 422.67%. An independent T-test of experiment was undertaken as statistical analysis. From the statistical test showed that presence of gelatin was significantly different in particle size and swelling index (sig < 0.05).
