- Flavonoids are a large group of plant polyphenolic compounds that are widespread in various foodstuffs and in various concentrations. Many polyphenolic compounds contained in tea, coffee, spices, cocoa, grains, cereals, flowers, vegetables, and others. Flavonoid compounds show activity as antioxidants. The content of total flavonoids in the material can be measured using methods Zhishen et al. The concentrasion of coffee powder used in the alnalysis of 100 ppm, 150 ppm, 200 ppm, 250 ppm, and 300 ppm. Observations absorbance values flavonoid compounds can be carried out in the wavelength range 300 nm - 420 nm using a spectrophotometer. Spectrophotometer is one method of instrumental analysis that uses basic interaction of energy and matter. Spectrophotometer can be used to determine the concentration of a solution through absorption intensity at a particular wavelength. The extraction can test the absorbance value at a wavelength of 374 nm using a spectrophotometer Genesys Spectonic 20 visible. The largest concentration of flavonoids found in samples of 250 ppm at 6.57%.
