  • <p>Medium compositions play important role in enhancing enzyme production in the fermentation. In the present study, the production of tannase by Rhodotorula glutinis DB2 was increased significantly when several medium compositions were optimized. These included 1.5% tannic acid as a substrate, 0.3% lactose as sugar additive, 0.8% urea as nitrogen source, and 72 hours fermentation time which finally resulted in 0.3 U/ml of tannase production after 72 hours of cultivation. The enzyme showed strong end-product repression with gallic acid. This was the first report of yeasts tannase production by Rhodotorula glutinis.</p>
