  • Amaranthus hybridus L. is a vegetable that is popular in community because it contains a variety of nutrients and easy to grow. Gunungkidul is a region which has porous soil character. Communities and farmers in Gunungkidul region grow spinach for their daily consumtion despite of the lack of water, whereas water plays an important role in the metabolic processes of plants. This study aimed to determine the effect of the different level of watering on nutrients content such as carbohydrate, lipid, protein, Vitamin A and Vitamin C in leaves of spinach, so that the most effective volume of watering that produce leaves with optimum nutrients content can be determined. This study used a completely randomized design with five treatments of watering which is done once in 4 days with volume of watering cause of 20% (0.25 L), 40% (0.5 L), 60% (0.75 L), 80% (1L) and 100 % (1.25 L) of field capacity. Spinach of seedlings 3 weeks old were planted in a polybag containing a mixture of lime soil and dung as fertilizer (1:1,v/v). Then, at the age of 45 days after doing planting, carbohydrate content was measured by calculating of carbohydrate by different, protein content was measured by the Kjeldahl method, lipid content by the soxhletation, Vitamin A by spectrophotometric method, Vitamin C with titration method, the ash content by furnicing method, and water content by oven drying method. The data were then analyzed by ANOVA and DMRT to show significant difference between samples. The results showed that various level of watering on spinach which caused no significant effect on carbohydrate and lipid contents. The highest content of protein is on the treatment of 40% field capacity and the highest content of Vitamin A is on the treatment of 20% field capacity. Vitamin C content of spinach leaf is increasing with the increase in field capacity.
