- Background : Improper food handling contributes to the occurence of foodborne disease. One contributor that may cause foodborne disease is food handler. To prevent foodborne disease, it is important to apply food hygiene and sanitation in food production. Another prevention method is by implementing hygiene and sanitation training for food handlers. Objective : To identify the effect of hygiene and sanitation training on knowledge and behavior of food handlers at Nutrition Installation of PKU Muhammadiyah Hospital Yogyakarta. Method : This study used an observational design with cross sectional approach. Quantitative method was completed by qualitative data form of in depth interview. The experiment was conducted at Nutrition Installation of PKU Muhammadiyah Hospital Yogyakarta during April-May, 2014 with total sample of 16 food production staffs. The research instrument included questionnaire of knowledge food handlers, a check list of behavioral assessment of food handlers, in depth interview guideline for food handlers, hygiene and sanitation appropriateness inspection forms, hygiene and sanitation and training modules. Data analysis was performed by using paired sample t-test, wilcoxon sign rank test, pearson and spearman correlation. Results : There are significant differences in the respondent�s knowledge before and after training as indicated by p value of 0,005 (p < 0,05). There was significant differences in the respondent�s behavior before and after training with p = 0,001 (p < 0,05). Conclusion : There is an effect of hygiene and sanitation training on knowledge and behavior of food handlers at Nutrition Installation of PKU Muhammadiyah Hospital Yogyakarta.
