  • Good Manufacturing Practices (GMP) the scope of building and labor is essential to be applied to the field of food industry in order to produce a product that is safe and suitable for consumption. The results of the evaluation of the scope of the GMP and labor building aims to provide remedial action for the industry that will be able to ensure the quality and safety of products produced tempe. Evaluation is done by comparing the GMP standards of sanitation guidelines by using the Regulation of the Minister of Industry of the Republic of Indonesia No 75/M-IND/PER/7/2010 of Processed Food Production Guidelines How Good (Good Manufacturing Practice) related to the implementation and building sanitation workers or employees. Analysis of qualitative and quantitative approaches is equipped with to ensure the suitability of the ground conditions are observed. Based on the observation of the scope of the building industry and labor in Tempe Muchlar not in accordance with the standards that have been set. In the industry still needs a lot of improvement, especially in the scope of such building, corner wall and floor meetings, use of doors, windows and ventilation and lighting the lamp. In the sphere of labor, repairs should be done include, use of uniforms, masks, gloves, shoes and a hairnet.
