- UD.Yuasa Food Berkah Mamkur is a unit trade go through carica ( Carica pubesences ) into syrup and candied. Making products existing produce waste solid and liquid that has not been used. Peel carica as solid waste containing considerable carbohydrates that can be used as a substrate in fermentation manufacture ethanol. Research aims to know sugar levels in each concentration, sugar content optimum the produced and potential added value obtained from solid waste peel carica. Important steps to making a substratum of carbohydrates in the form of cellulose: the peel carica hydrolysis to produce glucose.This research studies reaction the hydrolysis of waste the skin carica by using H2SO4 on which is 3 %, lower concentration 4 % and 5 %. The hydrolysis of done at a temperature of 121oC for 30 minutes with pressure 4 bar. Next in a test of the sugar content of reduction with the methods Nelson-Somoghyi. The data to be processed by test anova to know the influence and the difference between the concentration with the sugar content of reduction. The results showed that the optimum glucose derived from the hydrolysis is 4% H2SO4 catalyst concentration with sugar obtained 1.463 mg/mL. Concentration of 3% sugar 0.394 mg/mL, and the concentration of 5% sugar content 0.139 mg/mL in the presence and influence of differences in the concentration of 4% and 5%. Carica leather waste can be minimized by UD. Yuasa Food Berkah Makmur is used as a substrate in the manufacture of ethanol fermentation. Utilization of solid waste can add value to waste carica peel with more concentrating samples while hydrolysis.
