  • The addition of colorant agents on the food and beverage products were can not be avoided. The usage of them requires a strict of supervision, moreover the high tendency in the use of synthetic colorants. Roselle (Hibiscus sabdariffa L.) is one of the natural resources and has a high potency to be the origin of natural colorant because of its high content of anthocyanins. The optimization of its anthocyanin extraction requires a separate study for reach the high and stable content of anthocyanin extracts by vary the solventâ��s compotition, acidify the solvent with organic or mineral acid, and measure the duration of extraction. The solventâ��s system was made on 2 types, acidified with 0.01% of HCl and acidified with 3% of acetic acid. The solventâ��s compotition on each system was made on 3 formulas, 1 part of absolute ethanol
