- Bay leaf (Syzhygium polyanthum) is one of commonly used herb in Indonesia, utilized as food flavoring and medicine. Nevertheless flavor compound of fresh and dry leaf change during utilization. Essential oil extracted of the leaf was then, but it was found susceptible to environmantal damage. Microencapsulation then used to protect its flavour compound. Several factors may affect microencapsulation efficiency which coating agent is one of them. Gelatin from kurisi (Nemipterus tambuloides) skin as fish processing by product my be used as an coating agent alternatively. The aim this study was to investigate the encapsulation efficiency of bay leaf essential oil microencapsulation using gelatin from kurisi fish skin and compared to commercial bovine gelatin Destilation method was used to obtain essential oil, while gelatin extraction was conducted at 80 °C. Gelatin concentration were ( 2.5 , 5 , 7.5 , 10, 12.5 , 15 % ) and ratio between 1:20 to measure emultion and efficiency encapsulation. Concentration with highest efficiency was then compared to commercial gelatin. The highest efficiency was obtained from 10% concentration of kurisi gelatin. Microcapsule efficiency prepared using kurisi gelatin still lowest (51.0%) then commercial gelatin (57.5% ) with particle size of 3.84 to 12.9 Î1⁄4m and 5.63 â�� 34.03 Î1⁄4m for kurisi gelatin respectively. SEM analysis showed that bay leaf essential oil was more spherical and late compared to commercial gelatin. GCMS analysis showed that kurisi fish skin gelatin was able to trap 3% higher nerolidol which was bay leaf essenssial oil main compound to commercial gelatin (0,76 %). Therefore, it was included that gelatin from kurisi fish skin can used as coating agent for bay leaf essential oil.
