- This study was conducted to determine the characteristics of microencapsulated Î2 -carotene from Spirulina platensis which is encapsulated using maltodextrin and whey protein concentrate. The ratio of maltodextrin and whey protein concentrate (w/w) were (1:0), (2:1), (1:1), (1:2) and (0:1). The experiment was carried in the Completely Randomized Design in three replication. Carotenoid extracts of Spirulina platensis was obtained by extraction nine gram Spirulina platensis was added to 27 mL ethanol and 270 mL of hexane on a hot plate stirrer with a constant velocity, at temperature 51.9°C during 3.4 hours, the extract was evaporated and sprayed with nitrogen until all entrained solvent. Carotenoid extracts of Spirulina platensis was solved into amount of Virgin Coconut Oil, then mixed and stirred at 1100 rpm with coating material, then spray dryed with an inlet-outlet temperature 90â�°C and 50â�°C. The results showed that the combination of coating materials maltodextrin:whey protein concentrate was not significant (p>0.05)in a few of parameters, i.e: yield, solubility and water activity, but significant (p<0.05) in the total carotene, surface carotene, encapsulantion efficiency, carotene retention, moisture content and color microcapsules. Microencapsulated Î2- carotene of Spirulina platensis using maltodextrin:whey protein concentrate have specification ranged: yield ( 23.18% - 29.07% )
