  • Cattle are a major meat producer in Indonesia. Of the several types of meat, only the consumption of beef is still not met from domestic supply because the rate of increase in demand can not be offset by population growth and increased production. This caused beef prices soared. Similarly, the beef supply chain in Sleman regency, which is an imbalance between supply and demand supply chain resulting in decreased performance. One improvement efforts that can be done is by controlling inventory at each actor in the system of the beef supply chain. Perpetrators system consists of farmers, traders, market animals, broker, butchers, and consumers. This study begins by identifying the basic system of beef supply chain in Sleman. Furthermore, the system is modeled by a dynamic system that is software STELLA 9.1.3 along with verification and validation. The last step is to simulate the system modeling based on real conditions and involves many variables to construct policy scenarios related supplies beef consumed in Sleman. The results of this study indicate several conditions in accordance with the scenario that has been made. Scenario 1 is the increase in consumption per capita according Recommended Daily Intake (RDI) National. Results of scenario 1 is a population that tends to be lower than the consumption of beef from year to year so that there is a shortage of beef supplies that are not able to meet the need for in Sleman so necessary to import beef outside the Sleman area. Scenario 2 is the condition in which the per capita consumption also rise accordingly Sleman society RDI and percentage of cows that can be cut increased by 4.8% as targeted Self-Sufficiency Beef 2014. Results of scenario 2 is a population that tends to be higher than the consumption of beef thus allowing the buffer supplies beef to the domestic needs of Sleman.
