- This work is aim to investigate the total change of post harvest jambu air which package and storage at 50C. The purpose of this research is to know the change of total antioxidant of rose apple post harvest varieties of Dalhari during of packaging and storage temperature of 50C. Rose apple varieties of Dalhari which harvest at 40 days after seeding was placed at sterofoam tray and then was sealed with cling wrapper for storage at 50C. Rose apple varieties of Dalhari this tested content the total phenolic, total flavonoids, vitamin C and radical scavenging activity. The result showed that jambu air from dalhari variety which was kept at 5C give a higher value of total antioxidant activity, phenolic compound and flavonoid compound
