- Dental plaque was the cause of dental caries. Dietary is one of the factor of plaque formation, especially foods that contains carbohydrates, such as bread. The number of carbohydrates could affect the amount of dental plaque accumulation. Bread with chocolate filling was kind of bread that favored by children. The aim of this study was to determine the influence of the amount of carbohydrate in the bread with chocolate filling against dental plaque accumulation in children ages 9- 11 years old. This quasi-experimental research had been done on 32 students of Elementary School (SD N Bangirejo 1 Yogyakarta) who were divided into 2 groups, each group consisted of 16 children. Group 1 were treated eat a pack of bread with chocolate filling (±49 grams) and group 2 were treated eat two packs (±98 grams). PHP-M index by Martens and Meskin used to calculation of dental plaque score performed two hours after eating bread with chocolate filling, then after 3 days had done crossover. Dental plaque score data from each group then analyzed by paired t-test. The results showed that the mean score of dental plaque on group who eat 98 grams of bread with chocolate filling (0.98) is higher than the group who eat 49 grams bread with chocolate filling (0,68). Paired t-test results showed that there was significant difference between dental plaque score group who eat 49 grams and 98 grams of bread with chocolate filling t = 3.88 and p = 0.001 (p <0.050). Based on the result can be obtained from concluded that the greater number of carbohydrates was also higher the accumulation of dental plaque in children ages 9-11 years old.
