- Nata become one of the popular food products as healthy snacks. It makes demand of nata has increasing and build the number of nata�s industry. CV Agrindo Suprafood produce 102 tons/month to make sure that market get their needed for nata but just 40% of it that can be fulfilled due to the limitations of coconut water. Therefore, they need an alternative raw material that can be a komplementer medium for nata production. The purpose of this study is to get the best formula of glucose syrup as an alternative raw material media in the production process nata de coco, so as to reduce the dependence of coconut water. Physics, chemistry and sensory test as the next step conducted to determine the specification product of nata de glucose. Analysis of production nata de glucose on an industrial scale have done by scale up process from 500 ml to 120 l. The last, feasibility analysis of technical and financial aspects have done in CV Agrindo Suprafood. The results of the best formula obtained with 60% glucose syrup (4% dilution) and 40% coconut water, ZA 2% and 0,75% acetic acid. Consumers prefer products nata de glucose with the thick is 1,25 cm, chewy texture, white color, 95,28% moisture, 0,26% ash and 2,26% crude fiber. The results of scale up process have been shown with t test of two sample independent, it give the information that this process didn�t have any differ significantly as product as pilot scale. Feasibility analysis of the technical aspects is feasible with total time required for making nata de glucose in industrial scale is 8 days and availability the raw material is continued. The production capacity is 102 tons/month. As for the financial aspect is feasible with BEP is 2374,77 unit/month, NPV 464.185.520,65, BCR 1,14, IRR 76%, payback period in 1 year 6 month 5 days.
