- The study was conducted to identify the effect of sex on the carcass and non-carcass percentages of sheep slaughtered at Bantul slaughter house. The research was done from April to June 2012. The materials used were 63 sheep consisted of 39 female and 24 male. The data observed were carcass and non-carcass percentages (liver, leather, empty digestive tracts, head, lung, blood and heart). Data were analyzed using Ttest Independent analysis. The results showed that carcass percentage of male and female sheep was 49.01±1.05 and 50.14±1.04%, leather percentage was 10.21±2.05 and 10.59±1.03%, leg percentage was 3.83±0.27 and 3.48±0.28%, head percentage was 10.38±0.99 and 10.37±0.88%, heart percentage was 3.31±0.34 and 3.11±0.33%, liver percentage was 3.32±0.34 and 3.11±0.33%, lung percentage was 2.12±0.20 and 2.25±0.17%, percentage of digestive tracts was 11.45±0.80and 10.91±1.00%, and blood percentage was 3.46±0.42 and 2.55±0.22%, respectively for male and female sheep. Sex type had significant effect on the percentage of carcass, leg, liver, lung and digestive tract (P<0.05), while the percentage of leather, head, and heart did not significantly affected by sex. It is concluded that female sheep had higher carcass percentage than male sheep. Sex had widely effect on the non carcass percentages of sheep.
