- Food safety is one of important segments to protect consumers. Meat based foods product has big opportunity to adulteration and fraudelent with another meats. So, we need meat detection method with high sensitivity, fast, cheap, and accurate. The aim of this research is to identify non-beef material in meatball product by porcine detection kit assay, simplex polymerase chain reaction (PCR) and multiplex PCR assay. Porcine detection kit assay is a rapid test to identify pork material in food product. Then, PCR assay was developed to identify meat species with DNA based in meat products which have high temperature process such as a meatball. PCR assay have two types of identifications on meat species such as simplex and multiplex PCR. Sample of this reasearch is using meatball product from southern of yogyakarta. The result of this research show that there is non-beef material in the meatball samples by PCR assay which is chicken. However, the adulteration with pork material in all of the samples detected by porcine detection kit and PCR assay were not found. Multiplex PCR assay can identify continous three type of meats species (beef, chicken, and pork)
