- Purple sweet potatoes are known to contain antioxidant compounds, i.e. anthocyanins in high quantities. Antioxidants play a role in suppressing oxidative stress in the body due to the condition of hyperglycemia. This research aims to study the consumption effect of anthocyanin extract from purple sweet potatoes on blood glucose level, blood antioxidant status, and pancreatic histhopathologic of alloxan induced diabetic rats. The raw materials used in this research are local purple sweet potatoes obtained from Bantul. The subject of the experiments are 24 rats which has been classified into (4) four groups as follows: (i) healthy rats, (ii) hyperglycemia rats with no anthocyanin treatment, (iii) hyperglycemia rats treated with anthocyanin extract at a dose of 50 mg/kg, and (iv) hyperglycemia rats treated with anthocyanin extractat a dose of 100 mg/kg. The purple sweet potatoes are turned into powder, followed by extraction of anthocyanin using ethanol-citric acid 3% solvent. Anthocyanin extract was given during 35 days. In vivo analysis then carried out, which consist of: (i) blood glucose, (ii) blood antioxidant status represented by total antioxidant capacity using Ferric Reducing Ability of Plasma (FRAP) method and lipid oxidation product in the form of malondialdehid (MDA), (iii) pancreatic histopathological (iv) changes of body weight and feed comsumption. The results of experiments shows that the extraction process produces the extract containing 8,31 mg/g anthocyanin and have an antioxidant activity for capturing free radical activity equal to 79.61% by DPPH assay. In vivo testing results indicate that the consumption of anthocyanin extracts either dose of 50 mg/kg or 100 mg/kg lowered blood glucose level, increased blood antioxidant status with increased of FRAP value and decreased of MDA, and inhibited pancreatic Î2 cell damage. After 35 days, the value of blood glucose, FRAP, MDA are 126 mg/dl
