- Soybeans are contaminated by heavy metal Pb above the threshold suggested by SNI in the whole seed, cotyledon and endosperm. High level of Pb can be harmful to human health when it is accumulated in body. The aim of this study is to identify Pb contamination in the whole seed, cotyledon and endosperm of soybeans, reduce the level of Pb by immersion method using encapsulated of liquid smoke and citric acid, to determine the effect of variations in the marinade solution concentration along with marinade time and to determine the effectiveness of both marinade solution.
