- Diabetes mellitus (DM) is a metabolic disorder caused by a lack of production of insulin or inadequacy of insulin usage. Hypoglycemic effects of tempe can restore pancreatic cell functions. Germination can increase protein and bioactive compounds, which lead to DM prevention. The main objective of this research was to apprehend the effects of germinated soybean tempe flour (TKG) and non-germinated soybean tempe flour (TNG) consumptions on diabetic rat’s blood profile. The Blood profiles that were observed include blood glucose parameters, hematology parameters (hemoglobin, leucocyte, erythrocyte,hematocrit, and thrombocyte), and biochemical serum parameters (cholesterol, triglyceride, LDL, HDL, and albumin). Diabetic rats that consumed TNG and TKG during 32 days of the experiment showed lower blood glucose concentration than diabetic rats which consumed casein (positive control). Hemoglobin, hematocrit, and erythrocyte concentration of TKG’s diabetic rats were 14.1 g/dL; 37.3 percent; 7.9 million/mm3, respectively; which close to normal rats (negative control) as 13.4 g/dL, 34.6 percent, and 7.6 million/mm3, respectively. Blood triglyceride of TKG’s diabetic rats (64.0 mg/dL) was lower than TNG’s diabetic rats (89.4 mg/dL). TKG’s diabetic rats showed LDL parameter (9.2 mg/dL) which not significantly different (p>0,05) to negative control rats (3.4 mg/dL). TNG and TKG consumption had no significant (p>0,05) effect on leucocyte, thrombocyte, blood cholesterol, and HDL of diabetic rats. TKG’s diabetic rats had blood glucose, hematology profiles, cholesterol total, triglyceride, HDL, and LDL closer to negative control than other groups. keywords: tempe, soybean, germination, blood profile, diabetes
