- This study aims to provide information on the performance of production craftsmen tempe Tenggilis area of Surabaya. Because in economic development in Indonesia, Small and Medium become a very important sector for the people in Indonesia, because almost half of the population living in small business activities both in traditional sectors and in the modern sector. SME development in Indonesia are managed by two departments namely the Department of Industry and Trade and the Ministry of Cooperatives and SMEs. One of the centers of the right to object Sentra Tempe is located in the village of Tempe, Tenggilis Surabaya developed by the Department of Industry and Trade. Sentra Tempe is now renamed Kampung Tempe Tenggilis established decades ago. The underdog of these centers is primarily in terms of the manufacturing process from raw materials into finished materials and following standard quality standard that has been described by the government. In the manufacturing process, it is very important because in pembuatanya of raw materials up to the guaranteed quality and kebersihanya pengemasanya. In conducting this research object method used is a qualitative method that utilizes the penelititian open interviews to examine and understand the attitudes, views, feelings, and behavior of individuals or a group. And also by using short-term production analysis to measure the production process tempe producers in the region Tenggilis city of Surabaya.
