HUBUNGAN ASUPAN ZAT GIZI DENGAN PROFIL LIPID PADA DIET VEGETARIAN DI KOTA DENPASAR

- ABSTRAK Vegetarian adalah diet yang tidak mengonsumsi daging, terdiri dari vegan, lacto vegetarian dan lacto-ovo vegetarian. Banyak penelitian yang menyebutkan penganut diet vegetarian mengonsumsi karbohidrat berlebih, berupa daging tiruan atau daging analog. Kebiasaan tersebut dapat mempengaruhi profil lipid. Karbohidrat berlebih akan diubah menjadi lemak. Tujuan penelitian ini adalah menganalisis hubungan asupan zat gizi dengan profil lipid pada diet vegetarian di Kota Denpasar. Metode yang digunakan adalah cross sectional study. Sampel pada penelitian ini sebanyak 31 anggota Pasraman Sri-sri Jagannath Gaurangga di Denpasar. Analisis hubungan asupan zat gizi dengan profil lipid menggunakan uji Pearson. Didapatkan rerata asupan zat gizi karbohidrat sebesar 1045,70±309,68, asupan protein 280,24±1129,22, asupan lemak 180,77±81,15, asupan serat 111,95±46,90. Pada pemeriksaan profil lipid didapatkan kadar kolesterol total sebesar 198,10±45,13, kadar trigliserida (TG) 419,90±111,61, kadar Low Density Lipoprotein (LDL) 53,18±29,87, kadar High Density Lipoprotein (HDL) 47,04±7,95. Hasil penelitian menunjukkan bahwa hubungan asupan protein dengan kadar kolesterol total berpengaruh signifikan p<0,05 (r= -0,376; p= 0,037) begitu pula terhadap kadar trigliserida (r= -0,402; p= 0,030). Hubungan asupan serat juga ditemukan berpengaruh signifikan dengan kadar kolesterol total p<0,05 (r=-0,427;p=0,016), namun tidak ditemukan adanya pengaruh signifikan antara asupan karbohidrat dengan kadar HDL (p=0,564) dan LDL (p=0,090), antara protein dengan kadar HDL (p=0,168) dan LDL (p=0,717), antara lemak dengan kadar HDL (p=0,921) dan LDL (p=0,932), antara serat dengan kadar HDL (p=0,996) dan LDL (p=0,546). Dapat disimpulkan bahwa asupan protein berpengaruh signifikan terhadap kadar kolesterol total dan TG; asupan serat berpengaruh signifikan terhadap kadar kolesterol total namun tidak pada kadar TG. - ABSTRACT Vegetarian is a diet that does not consume meat. Groups of vegetarians are lacto vegetarians, lacto-ovo vegetarians, and vegans. Many studies showed, the vegetarian’s diet consume excess carbohydrates as analog meat that contains lots of fat. These habits are suspected of affecting lipid profiles. Excess carbohydrates will turn into blood lipid. The purpose of this study is to analyze the correlation between nutritional intake with lipid profiles on a vegetarian diet in Denpasar City. The method was using cross sectional study. Samples amount 31 were obtained from Sri-sri Pasraman Jagannath Gaurangga Denpasar. using the Pearson test. The average results of the carbohydrate intake were 1045.70 ± 309.68; protein intake 280.24 ± 1129.22, fat intake 180.77 ± 81.15, fiber intake of 111.95 ± 46.90. The average of total cholesterol levels were 198.10 ± 45.13; triglyceride (TG) levels 419.90 ± 111.61, Low Density Lipoprotein (LDL) levels 53.18 ± 29.87, High Density Lipoprotein (HDL) levels of 47.04 ± 7.95. The results showed that the correlation of protein intake with total cholesterol significantly correlate to total cholesterol levels p<0.05 (r= -0.376; p= 0.037) and TG levels as well (r= -0.402; p= 0.030). Fiber was also significantly correlate to total cholesterol levels p<0.05 (r=-0.427;p=0.016), but there was no correlation between carbohydrate with HDL (p=0.564) and LDL levels (p=0.090), between protein with HDL (p=0.168) and LDL levels (p=0.717), between fat with HDL (p=0.921) and LDL levels (p=0.932), between fiber with HDL (p=0.996) and LDL levels (p=0.546). It can be concluded that protein intake was significantly correlate to total cholesterol levels and TG; fiber intake was significantly correlate to total cholesterol levels but not to TG levels.
