  • ABSTRACT Test ing process of several rpm Speed of mechanical coffee roasters type rotary on the quality of the product, is interesting to note. This research was held to design, construct and test, ing of the coffee roaster parameters observed ware effective capacity, yield and organoleptic test. It was summerised that the effective capaeity of this equipment was 2.76 kg/hr, the yield percentage was 79.25%, and the organoleptic test was 2.45% (color). Keywords: Coffee, RPM, Effective Capacity, Yield, Organoleptic Test. ABSTRAK Proses uji berbagai level kecepatan RPM pada alat penyangrai kopi mekanis tipe rotari terhadap kualitas hasil, merupakan hal menarik untuk diketahui. Penelitian ini bertujuan untuk merancang, membuat serta menguji, parameter yang diamati adalah kapasitas alat, rendemen dan uji organoleptik.Dari hasil penelitian diperoleh kapasitas alat sebesar 2.76kh/jam, rendemen yang didapat sebesar 79.25% dan Uji organoleptik yang didapat 2,45% (warna). Kata Kunci : Kopi, RPM, Kapasitas Alat, Rendemen, Uji Organoeptik.
