- ABSTRACT Shrimp paste is a kind of fermented fish or shrimp that only have salting treatment and then left for several days in order to allow fermentation process happened. This research was purposed to examine the effect of workload on the performance of mechanical pestle. This research was by literature study, testing equipment and parameters obsevation. Parameters measured were effective capacity, percentage of missing ingredients, diesel fuel consumption and water content. The results showed that the workload had significantly affected the effective capacity, diesel fuel consumption and water content and not significantly affected percentage of missing ingredients. Key words: Mechanical pestle, workload, shrimp paste ABSTRAK Terasi adalah salah satu produk hasil fermentasi ikan atau udang yang hanya mengalami perlakuan penggaraman, kemudian dibiarkan beberapa hari agar terjadi proses fermentasi. Penelitian ini bertujuan untuk menguji pengaruh beban kerja terhadap kinerja alat penumbuk mekanis. Penelitian ini dilakukan dengan cara studi literatur, pengujian alat dan pengamatan parameter. Parameter yang diamati adalah kapasitas efektif alat, persentase bahan yang hilang, konsumsi bahan bakar solar dan kadar air. Hasil penelitian menunjukkan bahwa uji beban berpengaruh nyata terhadap kapasitas efektif alat, konsumsi bahan bakar solar dan kadar air dan berpengaruh tidak nyata terhadap persentase bahan yang hilang. Kata kunci: Alat penumbuk mekanis, beban kerja, terasi
