HUBUNGAN PERILAKU HIGIENE PERORANGAN (PERSONAL HYGIENE) PENJAMAH MAKANAN DI KANTIN KAMPUS C UNIVERSITAS AIRLANGGA SURABAYA

  • ABSTRAK Berkembangnya kegiatan penyelenggaraan makanan komersial menuntut para pengelola industri untuk memberikan kualitas makanan yang terbaik. Selain kualitas makanan, perilaku penjamah makanan dalam hal higiene perorangan (personal higiene) juga menjadi tolak ukur dalam industri makanan agar tidak terjadi masalah kesehatan yang melibatkan konsumen. Penelitian ini dilakukan untuk mengetahui hubungan antara perilaku higiene perorangan (personal hygiene) penjamah makanan di kantin kampus C Universitas Airlangga Surabaya. Penelitian ini dilakukan dengan metode cross sectional. Wawancara dilaksanakan pada 39 orang penjamah makanan. Subjek ditarik dari populasi dengan cara purposive sampling. Pengambilan data dilakukan dengan wawancara tentang higiene perorangan (personal hygiene). Pengujian hubungan dengan uji chi square (p<0,05) menunjukkan bahwa tidak ada hubungan antara pengetahuan dengan sikap higiene perorangan (personal hygiene) penjamah makanan, tidak ada hubungan antara pengetahuan dan praktik higiene perorangan (personal hygiene) penjamah makanan dan tidak ada hubungan antara sikap dan praktik higiene perorangan (personal hygiene) penjamah makanan. Kesimpulan yang dapat ditarik adalah pengetahuan, sikap dan praktik tidak saling berhubungan. Sehingga ada faktor lain yang dapat mempengaruhi perilaku penjamah makanan. ABSTRACT The development activities, in the commercial food industry requires managers to providequality food at its best. In addition to food quality, food handler's behavior in terms of personal hygiene (personal hygiene) a benchmark in the food industry in order to avoid health problems involving the consumer. This study was conducted to determine the relationship between the behavior of personal hygiene (personal hygiene) food handlers in the school cafeteria C Airlangga University Surabaya. This research was conducted by cross sectional method. The interview was conducted on 39 food handlers. Subjects were selected by purposive sampling. Data were collected by interview about personal hygiene (personal hygiene). Testing the relationship with the chi-square test (p> 0.05) indicates that there was no correlation between knowledge with attitude of personal hygiene (personal hygiene) of food handlers, there is no relationship between knowledge and practice of personal hygiene (personal hygiene) food handlers and no relation between attitude and practice of personal hygiene (personal hygiene) food handlers. The conclusion that can be drawn was the knowledge, attitudes and practices were not interconnected. So there was other factors that can influenced the behavior of food handlers. In that study it was expected that food handlers receive guidance about personal hygiene of the Department of Health and local health centers.
