- Polysaccharides from a number of fungal species are recognized as bioactive substance with potential health benefits. The growth-dependence fungal exopolysaccharide was produced by cultivation of mycelia in submerged culture, extracted and purified via solvent extraction. This study was evaluated antioxidant effects of polysaccharides extracted from strain SF97 isolated from soil sample in North of Iran. The in-vitro antioxidant activity of EPS (1% w/v) from SF97 was evaluated by determining the radical DPPH scavenging abilities of (85.3%) compare to ascorbic acid (0.5 mM) as the positive control. Results of chemical and spectroscopic analyses, including; Thin layer chromatography, Fourier-transform infrared and Gas chromatography indicated the presence of D-Glucose and D-Mannitol in the EPS molecule structure.
