  • Italian National Committee for Food Safety (CNSA) opinion of 20 January 2021 on Food-borne listeriosis: consumer exposure risk assessment Listeria monocytogenes is an opportunistic pathogen able to survive even at refrigeration temperature and under adverse conditions for other bacteria. Due to its remarkable resistance, L. monocytogenes is a relevant contaminant in processing environments and food, both raw and cooked. After consumption of contaminated food, most of the adults in good health conditions may either not have any symptoms or develop mild short-term gastroenteric symptoms. However, in pregnant women, infants, the elderly and immunocompromized individuals, serious forms of disease may develop. In Italy and in the other European Union countries, listeriosis cases show a growing trend, mainly affecting individuals over 65 years of age. Based on official food control data and consumption data, a preliminary study for estimating the exposure of Italian consumers was conducted, which showed the most critical issues being related to cooked meat dishes, that may be subject to handling and storage also after cooking, and to cured meat products. This confirms the importance of proper handling and storage of ready-to-eat food, both in the distribution and supply phases and in the home.
