World trend in the elaboration of cocoa derived products

  • In Venezuela, cocoa has been characterized by having the stamp of exquisite tones of aromas and flavors, valid properties to categorize it worldwide as one of the best. This research propose a review on cocoa products elaboration, with an impact on food, pharmaceutical and cosmetic market; easily prepared and with low investment cost. A systematic exploration based on patents was performed. Finding a range of products both in the food industry (instant drink, cheese with chocolate cover, alcoholic beverage), as well as in pharmaceutical and cosmetic products (extraction of polyphenols, soaps). According to the analysis in the last twenty (20) years, obtaining new products has been led by Japan, followed by the United States, China and Russia, reflecting the interest of non-producing countries in product development and innovation. The growth has been progressive, suggesting strategic approaches to patenting, dominated by European and Asian companies. This study has allowed discovering data of great interest necessary to understand global trends, which will allow the development of scientific-technological capabilities linked to the generation of new products aimed at entrepreneurs, industries and food
