  • The preliminary research included chitin flour production. Later on, production and characterization of chitin and chitosan. Characteristics of chitin and chitosan included solubility, the degree of deacetylation, intrinsic viscosity and molecular weight. The degree of deacetylation was analyzed by Infra Red Method, intrinsic viscosity by Brookfield LVT and molecular weight by Mark-Houwink equation. The result showed that characteristics of chitin that included the degree of water, ash, and deacetylation for each were 4,347%, 1,184%, and 65,944 % and chitosan that included the degree of water, ash and deacetylation, intrinsic viscosity and molecular weight for each was 2,750 %; 0,702 %; 80,737 %; 12,725 cps and 2,418 x 105. Characteristic of chitosan was suitable for pharmacy field application.
