  • For a long time, green-coconut water has been commonly used as beverage, alternative medicine, and basic material for industry. Due to the fact that coconut water is now in great use, a research is needed to examine the quality of coconut water. This research aims to determine the quality coconut based on general difference of coconuts, age group of coconuts (A: 8-9 months of age, B: 10-11 months of age, and C: 12-13 months of age ). Quality parameter applied in this research is Brix sucrose and pH. In this case, Hand Refractometer is used to measure Brix sucrose, while pH meter is used to measure pH. The result of the research show that the greater age coconuts are, the lower level Brix sucrose (A: 5.9, B: 4.4 and 4.1) and the pH of coconut water (A: 5.31, B: 5.57 and C: 5.75) are.
