  • Pempek Bu Husna Palembang produces pempek kecil and pempek telur besar. Author analyze how to determine the combination of production for both pempek with aim to maximize profits in Pempek Bu Husna Palembang. The research method used is interviews. The data was analyzed by using qualitative method and quantitative method. Quantitative method using linear programming of the simplex method and author added assumed ceteris paribus, it’s mean that other things have not changed. Based on the analysis of data obtained using the simpleks method to achieve the maximum profit in the amount of Rp 183.813.406,53, Pempek Bu Husna Palembang should produces 143.980,20 pempek kecil and 17.225,16 pempek telur besar, and the conclusions is Pempek Bu Husna Palembang need to produce pempek telur besar more because of the produce of pempek kecil is higher than pempek telur besar.
