  • Washing hands is one way to maintain the cleanliness of the hands from various diseases that are often contaminated with bacteria or microbial. The researcher developed a product using biological antiseptic gel form of papaya (Carica Papaya L.) as an alternative way of practical replaces soap and water for hand washing and gel form base hydroxypropyl Methyl Celullose likes Staphylococcus aureus and Escherichia coli (Sudarsono dkk. 2002). This research was aimed to determine optimal physical gel stability from gel formulation with addition Hydroxypropyl Methyl Cellulose as gel basic and Methyl Paraben as preservative ingredient. Purpose from this research is to formulate hand gel with addition various concentration of Hydroxypropyl Methyl Cellulose that is 1.5%, 2%, 2.5%, 3%, 3.5%, Methyl Paraben 0,2% as preservative ingredient, and Extract Papaya 1% as Antibacterial Activity. Furthermore, gel were evaluated for Organoleptic, pH, Homogenity, Density, Viscosity, Spreadability, Adhesiveness, Dry Time, Influence Storage, and Antibacterial Activity. Organoleptic tested with hedonic test were done to the best formula and involving 20 respondents. The data were analyzed with descriptive and statistical method. The result showed that the papaya extract after were formulated in hand gel has good physical stability is formula two (concentration of Hdyroxypropyl Methyl Cellulose 2%) because has produce physical charateristic more optimal and effect addition from methyl paraben as preservative ingredients can mantain of influence storage less than two month probationary period and physical structural balance from gel.
