Agriculture waste such as pineapple skin can be used as raw material of bio-ethanol with fermentation process. The purpose of this research is know the process of making bio-ethanol with solid state fermentation process from pineapple skin and determine % concentration, index bias, and volume of bio-ethanol which is produced by using zymomonas mobilis with variation of inokulum volume 10,15,and 20 mL and time of fermentation 18,24, and 30 hours. The fermentation was fermentation with low activity of water. The process had used zymomonas mobilis because it has several advantages such as resistant to high concentration of ethanol, more tolerant to temperature and low pH. The result of this research provedthat duration of fermentation and inokulum volume affected this process.
