- ABSTRAK Kajian Total Mikroba dan Asam tertitrasi Susu Kambing Peranakan Etawa (PE) pada Satu Periode Laktasi. Penelitian dilaksanakan mulai tanggal 5 Mei sampai 25 September 2012 di Kelompok Peternak Kambing Peranakan Etawa dan Laboratorium Produksi Ternak Perah Fakultas Peternakan Universitas Jenderal Soedirman Purwokerto. Penelitian bertujuan untuk mengkaji kualitas susu kambing pada satu periode laktasi ditinjau dari total mikroba dan asam tertitrasi. Penelitian ini menggunakan metode survey dengan melakukan pengujian terhadap variabel yang diamati dari setiap sampel. Rancangan penelitian menggunakan Rancangan Acak Lengkap sebagai perlakuan adalah 3 waktu pengambilan susu (awal laktasi atau L1, puncak Laktasi atau L2 dan akhir laktasi atau L3) dan 9 ulangan adalah ternak kambing. Hasil penelitian menunjukkan selama satu periode laktasi berpengaruh tidak nyata (P > 0,05) terhadap total mikroba dan asam tertitrasi. Nilai rataan total mikroba dari satu periode laktasi yaitu awal laktasi 6,09 log cfu/ml, puncak laktasi 6,68 log cfu/ml dan akhir laktasi 6,11 log cfu/ml. Nilai rataan asam tertitrasi pada satu periode laktasi yaitu awal laktasi 0,22 %, puncak laktasi 0,21 % dan akhir laktasi 0,21 %. Kesimpulan penelitian adalah dalam satu periode laktasi (awal laktasi, puncak laktasi dan akhir laktasi) susu kambing pada kelompok peternak Mendani mempunyai total mikroba) dan asam tertitrasi masih dalam kisaran SNI (SNI 1998, 2000). Kata Kunci : total mikroba, satu periode laktasi, susu kambing segar, asam tertitrasi. ABSTRACT Study of Total Microbial and Acid Titration of Ettawa Cross Goat Milk in One Lactation Period. The study was done from 5 th of May until 25 th of September 2012, at the “Mendani” Dairy Goat Ranch, Dukuhturi, Tegal Regency and The Dairy Laboratory, Animal Husbandry Faculty, Jenderal Soedirman University, Purwokerto. This research was aimed to assess the quality of goat milk in one lactation period in terms of total microbes and acid titration. This study used survey method to conduct testing of the observed variables of each sample of goat. The research design was a completely randomized design with 3 treatments, namely time of milking (early lactation or L1, peak lactation or L2 and late lactation or L3). Each threatment was replicated 9 times consisted of one goat per replicate. The results showed, lactation period did not affect significantly (P> 0.05) on the total microbial and acid titration. The average value of the total microbial in early lactation was 6,09 log cfu / ml, peak lactation was 6,68 log cfu / ml and the end of lactation was 6,11 log cfu / ml. The average value of the acid titration in the early lactation lactation was 0,22%, peak lactation was 0,21% and late lactation was 0,21%. Research conclusion was in the one period of lactation (early lactation, peak lactation and late lactation) milk of goat from “Mendani” Dairy Goat Ranch, Dukuhturi, Tegal Regency has a total microbes and acid titration is still in the range of SNI (SNI 1998, 2000).
