- SOP (Standard Operating System) use to minimize errors that occur. By existence of document SOP at garlic crackers business, the activities might be efficient according to standard. This research aims to analyze the problem and it solve at garlic crackers business. This research was conducted at garlic crackers business at Hos cokroaminoto street, Balung Kulon, Balung , Jember Regency, East Java. This research was use expert system method (by conducting interviews with several experts) and sampling by purposive sampling technique (the technique of determining the sample of a data with certain considerations). The result of this research are design of SOP mixing raw materials, SOP of Jerking, SOP of Steaming, SOP of Drying and SOP of Packaging. Key Words : SOP Design, Garlic Crackers
