  • Many kinds of food products have fled in the market, by developing of food industries. They cause some negative effect and decreasing quality and safety as well. Those could make consumer loss. Due to this situation, the society must be protected from the substandard of food production. Food manufacture and production facilities and production facilities in some food industries in Jabotabek. Bandung and Surabaya have been assayed. Sample selected was a high risk food in manufacture that caused some diseases and poisonous, as well as easy contaminated by microbiological, chemical and physical dangers for examples cattle breeding and fishery food manufactured. An explorative survey and observation of some food industries have been done. The results shows that there is no available of food industry has bad category of CPMB. While 12 food industries (52,17%) have good category of CPMB. And the rest, 11 food industries have insufficient category as well. All of food industries surveyed have production facilities as kinds of production needed. Among of 23 food industries surveyed only 14 industries or 60,8% have own assay-laboratories while 9 industries or 39,2% have no laboratory. Only 10 (43,5%) while 11 (47,8%) industries have assayed on microbiological trial. Keyword: Production faculties, food quality assay
